Grain Bowl Recipe ft. Many Vegetables

Here’s to anotha’ awesome college meal! I’m home for the summer, and my friends and I wanted to make something different, without meat. So naturally, we made veggie grain bowls! These ended up being SO yummy! So here’s to healthy eating! And not to worry, we ate quinoa too, a complete protein, so no missing out on those gains. 😀 This yummy meal, complete with protein and veggies, is $1.57 per serving! As always, feel free to sub these vegetables with whatever you like and whatever is on sale in your grocery store. You can create your own masterpiece!

Definitely a good one to meal prep so you have lots o’ veggies for your amazing week ahead!

Grain Bowl ft. Many Vegetables PDF

Ingredients (6 servings):

Required materials:

  • Cutting board
  • Small pot
  • 3 baking sheets

Instructions:

  1. Preheat oven to 400 F.
  2. Wash all your fresh produce, and rub olive oil on your baking sheets
  3. Chop brussels sprouts, broccoli, and cauliflower into bite-able chunks.
  4. Chop sweet potatoes into 1cm cubes, place on a plate, microwave for 2 min. (this helps lower their bake time to match the other veggies)
  5. Finely dice the garlic.
  6. Mix 6 tbsp olive oil with garlic, salt, pepper, and any other spices you want.
  7. Lay all your vegetables onto baking sheets. Drizzle/brush the olive oil mixture onto all your vegetables. Place into the oven. Cook at 400 for 15 min (or until vegetables are slightly crispy and cooked)
  8. Pour 1.5c quinoa into small pot and add water until there is 1 in. water covering the quinoa. Place on stove top (medium to high heat).
  9. Bring the quinoa to a boil. Cover the pot, reduce heat to medium low and simmer until water is absorbed (15 min). Make sure to stir the quinoa so it doesn’t stick to your pot.
  10. Chop tomatoes, place to the side in a bowl.
  11. When ready, take vegetables out of the oven, open up the hummus, and serve to enjoy!
